Ingredients
- 2 1/4 cups old fashioned rolled oats
- 2 tablespoons plus 2 teaspoons coconut sugar or brown sugar, divided
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon, plus extra for garnish
- 1/4 teaspoon salt
- 2 cups milk
- 1 large egg
- 2 tablespoons maple syrup
- 2 tablespoons melted coconut oil or unsalted butter
- 1 teaspoon vanilla extract
- 12 ounces (about 2 cups) diced peaches, plus a few slices of peaches for garnish
Directions
- Heat the oven to 350°F. Butter or lightly spray an 8x8-inch baking dish.
- In a medium bowl, whisk oats, 2 tablespoons sugar, baking powder, 1/2 teaspoon cinnamon, and salt until evenly mixed.
- In another bowl, whisk milk, egg, maple syrup, melted coconut oil or butter, and vanilla until smooth.
- Scatter diced peaches in the prepared dish. Pour the oat mixture evenly over the peaches. Pour the milk mixture on top and press gently so all dry bits are submerged. Arrange peach slices on the surface, then sprinkle with the remaining 2 teaspoons sugar and a pinch of cinnamon.
- Bake 35 to 40 minutes until set and just golden at the edges. Let rest 10 minutes before serving so the oats slice cleanly. Serve plain or with milk, Greek yogurt, or maple syrup.
Tips
- Use unsalted butter for richer flavor and to brown the edges; rewarm gently if the coconut oil firms up before mixing.
- Press down any floating oats so they hydrate evenly; an even soak prevents dry spots.
- Taste a peach for sweetness and adjust the sugar if needed; salt the base fully so the fruit tastes brighter.
- Let the bake rest before serving to lock in creaminess and avoid crumbling.
Optional Additions
- Swap peaches for berries or sliced bananas; add a handful of toasted nuts for crunch.
- Stir in a pinch of cardamom or ginger with the cinnamon for extra warmth.
- Serve with a dollop of tangy yogurt or a squeeze of lemon to balance the sweetness.
