  1. Heat the oven to 350°F. Butter or lightly spray an 8x8-inch baking dish.
  2. In a medium bowl, whisk oats, 2 tablespoons sugar, baking powder, 1/2 teaspoon cinnamon, and salt until evenly mixed.
  3. In another bowl, whisk milk, egg, maple syrup, melted coconut oil or butter, and vanilla until smooth.
  4. Scatter diced peaches in the prepared dish. Pour the oat mixture evenly over the peaches. Pour the milk mixture on top and press gently so all dry bits are submerged. Arrange peach slices on the surface, then sprinkle with the remaining 2 teaspoons sugar and a pinch of cinnamon.
  5. Bake 35 to 40 minutes until set and just golden at the edges. Let rest 10 minutes before serving so the oats slice cleanly. Serve plain or with milk, Greek yogurt, or maple syrup.
